Idaho Baked Potato Soup

In a large soup kettle or Dutch oven, melt the butter.  Stir in flour; heart and stir until smooth. Gradually add milk, stirring constantly until thickened.  Add potatoes and onions.  Bring to a boil; stirring constantly.  Reduce heat; simmer for 10 minutes.  Add remaining ingredients; stir until cheese is melted.  Serve immediately.  Yield 8-10 servings (2.5 quarts)

Birthplace of Sacajawea – Idaho

Birthplace of Sacajawea – Idaho

Sacajawea, interpreter for the Lewis and Clark expedition was born in Idaho near this view of Lembi Pass.  When the expedition crossed the continental divide here they left territory covered by the Louisiana Purchase and entered what would become Idaho.  This statue of Sacajawea is in the town of Salmon.
